I just started with the beets

I just started with the beets too. I roasted the roots in the oven, put the greens in a bean pasta, and blended the stems in a brocolli soup. A very multi-use veggie. Richard's not quite so keen.

kz- literally, yes it's bright out. figuratively, the fog has lifted, but saying it's bright out would be a stretch! one day at a time tho...

kf- they are the last vegetable i have yet to conquer, i used to hate them, but have been oddly craving them since being on the antibiotics. i think my liver needs purifying or something. i don't know if i'll ever get used to after-effects of beet eating!
